4 whole water chestnuts , chopped fine
1 egg white
1 teaspoon cornstarch
1/2 teaspoon salt

1 tablespoon light soy sauce
1 tablespoon oil
1/4 cup tapioca flour
3/4 cup wheat starch
10 1/2 tablespoons boiling water
1 tablespoon oil
3 tablespoons light soy sauce
1 tablespoon sesame seed oil
1/2 teaspoon chili oil
Har Gow is a Cantonese dim sum dish that originated from Guangdong. It is also known as crystal shrimp dumplings due to the translucent texture of the wrap. The filling is made of fresh shrimp, water chestnuts, and scallions, which are wrapped in a thin transparent dumpling skin. Instructions

1.In a large bowl, mix together the chopped shrimp, scallion, water chestnuts, egg white, cornstarch, salt, black pepper, light soy sauce, and oil.
2.In a separate bowl, mix together tapioca flour and wheat starch.
3.Slowly add in boiling water, stirring continuously until well combined.
4.Add oil to the dough and knead for 5 minutes until smooth.
5.Cut the dough to small pieces and roll each one into a 2-inch circle.
6.Place filling in the center and gather the edges together to form a pouch, pleating to seal the top.
7.Steam the dumplings in a bamboo steamer for 5 minutes or until the wrapper turns translucent.
