Ingredients

8 cups chicken stock
2 tablespoons coarsely chopped fresh ginger
3 garlic cloves , peeled
1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves
2 whole chicken breasts , bone in
1 lb bok choy , chopped
1/4 lb vietnamese rice noodles , 1/2-inch-wide ( bahn pho )
3 tablespoons finely chopped scallions
4 ounces baby tatsoi
vietnamese hot sauce ( tuong ot toi )

Instructions

1.In a large pot, bring the chicken stock to a boil with the ginger, garlic, cilantro, and mint.
2.Once boiling, add the chicken breasts to the pot and reduce the heat to low. Cover and simmer for 12-15 minutes, or until the chicken is fully cooked.
3.Remove the chicken from the pot and let it cool. Shred the chicken and set it aside.
4.Strain the broth and discard the solids. Return the broth to the pot and add the bok choy, scallions, and rice noodles. Simmer for 3-5 minutes, or until the noodles are tender.
5.Add the baby tatsoi and the shredded chicken to the pot and cook for an additional 2-3 minutes.
6.Serve hot with a side of Vietnamese hot sauce if desired.
