Ingredients

1 lb 15 bean soup mix
1 onion , minced
3 garlic cloves , minced
1 teaspoon chili powder
1 can tomato paste
1/2 lb chopped Polish sausage ( or suitably flavored Tempah for vegetarians or vegans )
2 2 tablespoons of better than bouillon chicken base or 2 tablespoons flavorful vegetable stock , see note
Refried beans are a classic side dish that can be served with a variety of Mexican-inspired dishes like tacos, burritos, and enchiladas. This recipe takes the classic refried beans up a notch by adding in Polish sausage and a flavorful onion mixture. The end result is a creamy and delicious side dish that is packed with protein and fiber, making it a nutritious addition to any meal.

Instructions

1.Rinse and sort the beans in a colander. In a large pot, combine the beans with 8 cups of cold water and soak overnight.
2.Drain and rinse the beans, then add them back to the pot with 8 cups of water.
3.Bring the water to a boil, then reduce heat and simmer the beans for 1 1/2 - 2 hours or until tender.
4.In a separate pan, saute the onions and garlic until translucent.
5.Add in the chili powder, tomato paste, and Polish sausage, cooking until fragrant and the sausage is browned.
6.Add the onion mixture to the cooked beans, along with 2 tablespoons of the better than bouillon chicken base or flavorful vegetable stock. Mash the beans with a potato masher or immersion blender until the desired consistency is achieved.
7.Serve hot, topped with shredded cheese, sour cream, and chopped cilantro if desired.
