Instructions

1.Rinse the sushi rice in cold water until the water runs clear. Drain the rice well and place it in a pot with 1 1/4 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 20 minutes. Turn off the heat, let the rice sit for 10 more minutes.
2.Cut the nori sheets in half. Dampen your hands with water and put a handful of rice in your palm. Flatten the rice and shape it into an oblong shape that corresponds to the size of the nori sheet. Lightly sprinkle the sushi rice with some rice vinegar.
3.Place a strip of fish or caviar or eel (your choice) lengthwise on the rice. Fold the bottom edge of the nori over the filling. Roll the sushi up around the filling. Press the seam of the nori together to make a roll. Repeat these steps with the remaining ingredients.
