Instructions

1.To prepare the aioli, mash the garlic in a small bowl with a pinch of salt until a smooth paste is formed.
2.Whisk the garlic paste, mayonnaise, smoked paprika, and lemon juice. Add finely chopped parsley, stir well and season with salt and pepper. Chill until ready to serve.
3.Preheat 4 inches of vegetable oil to 375°F in a heavy-bottomed Dutch oven or deep fryer.
4.In the meantime, wash, peel and cut the potatoes in uniform 1/2-inch-thick sticks. Rinse in cold water and pat dry with a towel.
5.Working in successive batches, fry potatoes in hot oil for 3-5 minutes or until golden brown and crispy.
6.Move fries to paper towels to drain. Sprinkle with kosher salt.
7.Serve fries immediately with the prepared Smoked Aioli.
