1 cup lentils
1 quartered garlic clove
1 tablespoon cumin
3 large onions
1 cup oil
6 ounces uncooked elbow macaroni
2 cups dry rice
salt
chicken stock or vegetable stock
1 can tomato sauce
1 dash lime juice
2 minced garlic cloves
1 dash yellow mustard
2 tablespoons vinegar

It is a hearty and flavorful dish that combines pantry staples like lentils, rice, and elbow macaroni with rich tomato sauce and caramelized onions. Instructions

1.Rinse lentils with cold water and drain. Add lentils and garlic clove to a medium pot and fill with enough water to cover the lentils. Cook lentils until soft and tender.
2.Meanwhile, heat a large pan over medium heat. Add cumin and toast for 30 seconds, stirring constantly. Add 2 sliced onions and sauté until caramelized. Remove onions from pan and set aside.
3.In the same pan, heat up 1 cup of oil at medium-high heat. Add elbow macaroni and fry until golden brown. Remove from pan and set aside.
4.Using the same pan, add another tablespoon of oil and sauté the other sliced onion until caramelized.
5.In a large pot, bring 3 cups of chicken or vegetable stock to a boil. Add 2 cups of dry rice, a pinch of salt, and stir briefly. Lower the heat as low as possible, closely cover with a lid, and let the rice cook undisturbed for 18 minutes.
6.In another pot, add 1 can of tomato sauce, lime juice, 2 minced garlic cloves, and a dash of yellow mustard. Stir until well combined, then cook on low heat for 10 minutes.
7.Once the rice is finished cooking, remove from heat and fluff with a fork. Add in the cooked lentils, elbow macaroni, and caramelized onions. Stir until everything is combined.
8.Serve hot and top with the tomato sauce mixture and a sprinkle of chopped parsley.
