2 wholemeal pita breads
2 tablespoons tomato paste
150 g shaved ham
250 g cherry tomatoes , halved
1/4 small red onion , sliced thinly
1/3 cup low-fat ricotta cheese
30 g baby rocket
2 tablespoons fresh basil , finely shredded

Instructions

1.Preheat oven to 200°C (180°C fan forced).
2.Place pitas on two oven trays lined with baking paper, spread 1 tablespoon of tomato paste on each pita.

4.Bake in preheated oven for 8-10 minutes, or until the cheese has melted and the vegetables become lightly roasted. Sprinkle over with fresh basil leaves and cut each pita into quarters to serve.
