Ingredients

250 g pumpkin , peeled and cut into 2cm pieces
cooking spray
2 teaspoons olive oil
1 garlic clove , crushed
1 small red onion , chopped
1 cup arborio rice
1/2 cup white wine
4 cups low-fat chicken stock , kept on the stove at a simmer
75 g lean ham , cut into strips
1/2 cup frozen peas
2 tablespoons chopped fresh parsley
4 sage leaves , chopped
fresh ground black pepper
20 g parmesan cheese , finely grated
The Ham, Pumpkin and Pea Risotto is a hearty and filling meal that is perfect for a cozy dinner or lunch. Instructions

1.Preheat the oven to 200C. Line a baking tray with baking paper.
2.Place pumpkin in tray, spray with cooking spray and bake for 15 minutes or until pumpkin is soft.
3.In a pan, heat the olive oil over medium heat. Add garlic, red onion, and arborio rice. Stir and cook for 2 minutes until onion is soft and rice is coated in oil.
4.Pour in white wine. Let it simmer until absorbed by rice.
5.Add a ladleful of chicken stock to the rice and stir until absorbed. Continue to add stock one at a time, allowing each ladleful to be fully absorbed before adding the next.
6.After 15 minutes, add the ham, peas, parsley, sage and black pepper in the last ladleful of stock.
7.Finally, stir in pumpkin and parmesan cheese and cook for another 5 minutes.
8.Serve hot and enjoy!
