Ingredients

250 ml milk
1 tablespoon butter
1 tablespoon flour ( mixed to a paste mixed with the butter for a paste )
140 g button mushrooms , cut into quarters
1 tablespoon olive oil
140 g ham , chopped into small pieces
85 g leftover cheese , cut into small pieces
1 tablespoon chopped herbs , tarragon , parsley and chives all work well
500 g puff pastry
1 egg , beaten

Instructions

1.Preheat the oven to 200°C.
2.In a saucepan, bring the milk to a simmer over low heat. In another saucepan, heat the butter and flour mixture over low heat. Gradually whisk in the hot milk and cook until the mixture becomes thick.
3.In a frying pan, heat the olive oil and fry the mushrooms for a few minutes until soft. Add the chopped ham and fry for 2-3 minutes. Remove from heat and leave to cool.
4.On a lightly floured surface, roll out the puff pastry and cut it into rectangles. Brush beaten egg over the edges of the rectangles. Spoon some of the mushroom and ham mixture onto one end of the pastry, top with the cheese and herbs. Fold the pastry over and press the edges together to seal the turnover.
5.Brush the turnovers with beaten egg and prick the tops with a fork. Bake for 20-25 minutes until golden brown.
6.Serve hot or cold.
