1 package phyllo pastry , thawed
1 cup unsalted butter , melted
2 cups fresh spinach , cooked , squeezed dry and chopped
2 cups ricotta cheese
1 1/2 cups cooked ham , shredded
1/2 cup parmesan cheese , grated
1/2 teaspoon dried tarragon leaves
4 egg yolks
salt and pepper

Instructions

1.Preheat the oven to 375°F (190°C).

3.Lay out a sheet of phyllo pastry and brush it with melted butter. Cover with another sheet of phyllo pastry and brush with butter again. Repeat until you have 6 layers of phyllo pastry.
4.Cut the stacked phyllo pastry into 3-inch strips.
5.Place a tablespoon of the cheese and ham mixture on one end of each strip. Fold the pastry over the filling to form a triangle. Continue folding the pastry in a triangular shape until you reach the end of the strip.
6.Repeat with the remaining strips of phyllo pastry, arranging the triangles on a baking sheet lined with parchment paper.
7.Brush the tops of the triangles with melted butter and bake in the preheated oven for 20-25 minutes, or until golden brown. Serve warm.
