Ingredients

2 tablespoons extra virgin olive oil
3 tablespoons unsalted butter
1/2 cup all-purpose flour
1 1/4 cups whole milk
1/3 cup serrano ham ( about 1.8 oz . ) or 1/3 cup prosciutto , finely chopped ( about 1.8 oz . )
1/3 cup grated manchego cheese ( about 1.8 oz.. )
1/8 teaspoon grated nutmeg
kosher salt
2 eggs
1 cup panko breadcrumbs
vegetable oil ( for frying )
1 cup mayonnaise
2 garlic cloves
2 teaspoons fresh lemon juice
1 teaspoon spanish sweet smoked paprika

Instructions

4.Beat eggs in a separate bowl, and place panko breadcrumbs in another bowl.
5.Take 1 tablespoon of croqueta mixture and roll into a ball. Dip in beaten eggs and then roll in bread crumbs to coat. Repeat until all the mixture has been used.
6.Fill a deep skillet or pot with vegetable oil about halfway, and heat over medium-high heat. Once the temperature reached 350 F, carefully place croquetas into the hot oil in batches. Fry until golden brown and crispy, then transfer to a paper towel-lined plate to drain.
7.In a small bowl, whisk together mayonnaise, garlic, lemon juice, and smoked paprika until smooth. Serve croquetas with aioli.
