Ingredients

2 1/2 cups sugar
2 tablespoons lemon juice
3 cups water
4 ounces butter , room temperature
3/4 cup caster sugar ( or superfine sugar )
2 teaspoons lemon rind , finely grated
3 eggs
1 1/2 cups semolina
1 cup self-raising flour
1/2 cup milk
1/2 cup blanched almond , toasted and finely chopped
blanched almond , flaked ( to decorate )
Halvas Fourno is a traditional Greek cake that is often served on special occasions such as weddings, baptisms, and Easter. It is made with semolina, which is a coarse flour made from durum wheat. This gives the cake its distinctive grainy texture and golden color. Instructions

1.Preheat the oven to 180°C.
2.In a saucepan, combine the sugar, lemon juice, and water. Bring to a boil, stirring until the sugar dissolves.
3.Simmer for 10 minutes until the syrup thickens, then set aside to cool.
4.In a large bowl, cream the butter, caster sugar, and lemon rind until pale and fluffy.
5.Beat in the eggs, one at a time, followed by the semolina, flour, and milk.
6.Fold in the chopped almonds.
7.Grease a rectangular baking dish and pour in the batter.
8.Bake for 20 minutes, then remove from the oven and pour the cooled syrup over the cake.
9.Return the cake to the oven and bake for a further 40-45 minutes until golden brown.
10.Allow the cake to cool before slicing and serving. Decorate with flaked almonds.
