6 ounces cream cheese
24 green olives , pimento-stuffed
12 radishes
6 eggs , hard-boiled
red food coloring , for decorating

Instructions

1.Using a sharp knife, slice the top off of each egg and remove the yolks.

3.Fill each of the egg white ‘eyeballs’ with the cream cheese mixture.
4.Cut off the stem and root end of the radishes and hollow out a small circle in the middle of each one.
5.Stuff each radish with a pimento-stuffed olive and place them on top of the stuffed eggs.
6.Dip the tip of a toothpick into the red food coloring and draw veins on the radish ‘eyeballs’.
7.Serve or refrigerate until ready to serve.
