8 spring onions
1 tablespoon sweet paprika
8 halibut , pieces
12 baby carrots
12 baby fennel
12 baby leeks
12 shallots
500 ml chicken stock
150 ml white wine
1 tablespoon cornflour
3 eggs , separated
2 lemons , juice of
salt
pepper
Halibut Parcels in Lettuce are a healthy and delicious way to enjoy fresh fish and vegetables. Instructions

1.Preheat oven to 180°C.
2.Bring a large pot of salted water to the boil. Blanch the baby carrots, fennel and leeks until just tender, then refresh in iced water and drain well.
3.Puree the prawns and spring onions in a food processor, then place in a bowl with the paprika, cornflour, egg yolks, half the lemon juice and salt and pepper. Mix well.
4.Lightly oil 8 large pieces of baking paper. Place two lettuce leaves on each, then top with one piece of halibut. Top fish with the prawn mixture, then top with another lettuce leaf. Arrange some blanched vegetables and a shallot on top. Drizzle some of the chicken stock and white wine over, then gather up the paper and tie with kitchen string to make a parcel. Repeat with remaining ingredients.
5.Place the parcels in a roasting pan and bake in the oven for 20 minutes.
6.Whisk remaining egg whites until stiff peaks form, then fold in the remaining lemon juice. Serve parcels with a dollop of lemon foam. Enjoy!
