Ingredients

250 250 g beef or 250 g chicken
2 carrots
2 turnips
2 large potatoes
2 stalks celery
3 2 tablespoons tomato concentrate or 2 tablespoons tomato puree
1 bunch fresh flat leaf parsley
1 onion
2 cups vermicelli or 2 cups thin spaghetti , broken into 1/4-inch pieces
1 tablespoon oil
2 teaspoons fresh ground black pepper
1/8 teaspoon saffron ( optional )
1 teaspoon good turmeric

Instructions

1.Cut the beef or chicken into small cubes and chop the onions.
2.Heat the oil in a large pot and add the meat cubes. Cook until browned.
3.Add the chopped onions and cook until softened.
4.Add 2 liters of water and the tomato concentrate or puree and bring to a boil.
5.Peel the carrots, turnips, potatoes and chop into small pieces. Add them to the pot, along with the chopped celery.
6.Finely chop the parsley and add it to the pot, along with the saffron (if using), black pepper and turmeric.
7.Stir everything well and simmer for 45 minutes until the vegetables are tender.
8.Add the vermicelli or spaghetti and simmer for another 10 minutes.
9.Serve hot and enjoy!
