4 tomatoes
150 g yoghurt
4 tablespoons chives
4 tablespoons dill
3 eggs

Instructions

1.Preheat the oven to 200C/180C fan/gas 6.
2.Fry the spinach over a high heat for 2-3 minutes and season with salt and pepper.
3.Set the spinach aside and heat oil in a frying pan.
4.Fry the haddock fillets on both sides until golden brown.
5.Slice the tomatoes and place them in an ovenproof dish, then place the fillets on top of the tomatoes.
6.Mix yoghurt, chives, dill, eggs, nutmeg, salt and pepper in a bowl.
7.Pour the yoghurt mixture over the fish.
8.Spread the spinach on top, then sprinkle the grated cheddar cheese over the spinach.
9.Bake in the oven for 15-20 minutes until the cheese is golden brown.
