Ingredients

2 teaspoons salt
3 lbs fresh fava beans , in the shell or 1 1/2 lbs dried split fava beans
1/4 cup olive oil
1 yellow onion , finely chopped
1 garlic clove , minced
1 slice dry-cured ham , finely diced
3 hard-boiled eggs , peeled
1 tablespoon chopped fresh flat-leaf parsley
Habas Rondenas is a traditional Spanish dish typically enjoyed during the springtime when fresh fava beans are in season. This dish is a perfect balance of flavors that come from the combination of fava beans, garlic, onions, ham, and eggs, which are all commonly found in Spanish cuisine. Habas Rondenas can be served as a main dish, or as a side dish with salad or bread. Instructions

1.Bring a pot of water, and 2 teaspoons of salt, to a boil and cook the beans for 7-8 minutes if they are fresh, and 30-40 minutes if they are dried.
2.Drain the beans and rinse with cold water while removing the tough outer skins.
3.Meanwhile, heat the olive oil in a frying pan and sauté the onions and garlic until they are golden.
4.Add fava beans to the pan and stir gently.
5.Add diced ham and a little bit of water to the frying pan and cover it for 3-5 minutes.
6.Cut 3 hard-boiled eggs into small pieces and add them to the frying pan.
7.Add salt to taste and continue cooking for another 2-3 minutes.
8.Serve hot with some chopped parsley on top.

CONS

A key ingredient, fava beans, may cause a type of anemia in some individuals called favism, so it should be avoided by people with G6PD deficiency.
