Ingredients

2 tablespoons olive oil
2 habanero peppers or 4 jalapeno chiles , minced
1/2 medium red bell pepper , minced
1/2 medium shallot , minced
6 tablespoons balsamic vinegar ( do not substitute )
1 tablespoon honey
3 large ripe peaches , unpeeled , pitted and sliced
3/4 lb unsalted butter , softened

Instructions

1.Heat the olive oil in a medium pan over medium heat.
2.Add the minced habanero or jalapeno chiles, red bell pepper, and shallot to the pan, stirring occasionally.
3.After 5 minutes, add the balsamic vinegar and honey to the pan, stirring well.
4.Add the sliced peaches and cook for 5-7 minutes, stirring occasionally, until the peaches are softened.
5.Remove the pan from heat and allow the mixture to cool slightly.
6.In a separate bowl, beat the softened unsalted butter until fluffy.
7.Add the cooled peach mixture to the butter, mixing well.
8.Transfer the Habanero-Peach Butter to a covered dish or jar and chill for 1 hour before serving.
