Ingredients

2 lbs mixed greens ( such as collard greens , mustard greens , turnip greens , beet , carrot or radish tops , spinach , green c )
1/4 cup bacon fat or 1/4 cup corn oil
1/3 cup all-purpose flour
1 large onion , peeled and chopped
1 clove garlic , peeled and minced
1 green pepper , cored , seeded and diced
1 bay leaf
1/2 teaspoon dried thyme
1 - 1 1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1/4 - 1/2 teaspoon cayenne pepper
1/2 lb smoked ham , cut into chunks
1/2 lb garlic sausage or 1/2 lb andouille sausage , cut into chunks

This recipe was originally created to be served on Good Friday, as it was a meatless dish that could still provide enough sustenance to last until Easter Sunday. Instructions

1.Wash and thoroughly dry all the greens. Remove the tough stems and chop them into small pieces.
2.In a large pot, heat the bacon fat or corn oil over medium heat.
3.Gradually add in the flour, whisking continuously, to make a dark brown roux.
4.Add the onion, garlic, and green pepper. Cook for 5-7 minutes or until the vegetables are soft.
5.Add the bay leaf, thyme, salt, black pepper, white pepper, and cayenne pepper. Cook for another 5-7 minutes.
6.Gradually add the greens, stirring constantly until wilted.
7.Add the smoked ham and sausage. Cover and cook for 1-2 hours or until the greens are tender.
8.Remove the bay leaf and serve hot over rice or with cornbread.
