Ingredients

1/2 teaspoon ground cardamom
2 drops rose water ( optional )
1 pinch saffron ( optional )
2 tablespoons all-purpose flour
1/4 teaspoon baking soda
2 tablespoons plain yogurt
2 cups vegetable oil for frying
Gulab Jamun/Kala Jam (Waffle Balls) is a popular South Asian dessert that is enjoyed throughout the year, especially on festive occasions like Eid, Diwali, and wedding ceremonies. Instructions

1.Start by making the sugar syrup. In a saucepan, bring water to boil then add white sugar, cardamom, rose water, and saffron if using. Stir well and let it simmer for 5 minutes until the liquid has reduced and thickened. Let it cool.
2.In a mixing bowl, sift together all-purpose flour and baking soda. Add plain yogurt and mix well to form a soft and sticky dough.
3.Divide the dough into 18-20 small balls.
4.In a deep frying pan, heat vegetable oil on medium-high flame. When the oil is hot, add a few dough balls to the oil and fry until they turn golden brown. Remove them with a slotted spoon and transfer them to a plate lined with paper towel to absorb excess oil.
5.Once all the balls are fried, add them to the cooled sugar syrup and let them soak for at least 30 minutes before serving.
