Ingredients

1/2 lb cabbage
1/2 lb carrot
1/2 hot green chili pepper ( fresh )
2/3 tablespoon vegetable oil
1 pinch asafoetida powder
2/3 tablespoon black mustard seeds
1 dried hot red chilies
7/8 teaspoon salt
1/3 teaspoon sugar
2/3 tablespoon fresh coriander , chopped
2/3 teaspoon lemon juice
Gujerati-Style Cabbage with Carrots (Sambhara) is a popular dish from the western Indian state of Gujarat. It is a simple yet flavorful stir-fry that is typically served as a side dish or with roti or parathas. The dish is spiced with asafoetida powder, black mustard seeds, and dried red chilies, which gives it a unique flavor. Instructions

1.Finely shred the cabbage and julienne the carrots. Set aside.
2.In a wok or large pan, heat the vegetable oil over medium-high heat.
3.Add the asafoetida powder, black mustard seeds, and dried red chilies and stir for 30 seconds till the mustard seeds pop.
4.Add the chopped green chili and the cabbage and stir-fry for 2-3 minutes until the cabbage is slightly tender.
5.Add the carrots and continue to stir-fry for another 2 minutes.
6.Sprinkle salt, sugar, and lemon juice over the cabbage and carrot mixture.
7.Stir-fry for another 2 minutes until everything is well combined.
8.Garnish with chopped fresh coriander before serving.
