Ingredients

2 baby back rib racks
1 medium white onion ( finely chopped )
4 -5 garlic cloves , chopped
1 can Guinness stout or ( 10 ounce ) can other dark beer
1/2 cup honey
1/2 cup brown sugar
1 cup molasses
pepper
1 tablespoon coriander seed ( fresh ground is better )
fennel seed ( to taste )
kosher salt ( to taste )
1 tablespoon chili flakes
1/2 cup orange juice
1 orange , zest of

Instructions

1.Preheat oven to 300 degrees F (150 degrees C).
2.In a large baking dish, combine the onion, garlic, Guinness, honey, brown sugar, molasses, pepper, coriander seed, fennel seed, kosher salt, chili flakes, orange juice, and orange zest. Mix well.
3.Add the rib racks to the dish, meat-side down, and spoon the marinade over the top.
4.Cover the dish with foil and bake in the preheated oven for 2 hours.
5.After 2 hours, remove the foil and turn the ribs meat-side up. Increase the oven temperature to 400 degrees F (205 degrees C) and cook for an additional 30 minutes, basting with the marinade every 10 minutes.
6.Remove the ribs from the oven and let rest for 10 minutes before cutting and serving.
