3 tablespoons milk

1/2 cup water , at 105 to 115 degrees F
1 1/4 tablespoons salt
2 1/2 teaspoons vanilla
2 lemons , grated zest only
4 3/4 cups flour
3 eggs
1 egg
2 teaspoons water
1 egg white
1/2 cup coarse sugar
1 1 cup pine nuts ( etc ) or 1 cup walnuts ( etc )
1 cup raisins , dark and light
1 cup almonds
1/2 cup breadcrumbs
1 1/2 tablespoons unsweetened cocoa powder
5 1/2 ounces unsweetened dried fruit , any combination
1/2 cup apricot jam
2/3 2/3 cup Amaretto or 2/3 cup rum
1 teaspoon cinnamon
3 tablespoons sugar
1/2 cup candied orange peel
1 egg , slightly beaten

Instructions

1.In a medium-sized saucepan over medium heat, melt the unsalted butter and stir in the milk, 3 tablespoons sugar, dry yeast. Let it sit for 5 minutes.
2.In a stand mixer with a dough hook attachment, combine the water, salt, vanilla, lemon zest, and flour until a dough forms.
3.Add the yeast mixture, 3 eggs, and 1 egg yolk to the stand mixer and mix until a soft dough forms.
4.Cover the dough with a towel and let it rise for 1 hour.
5.In a food processor, combine the coarse sugar, pine nuts, almonds, raisins, breadcrumbs, cocoa powder, candied orange peel, and dried fruit. Pulse until mixture becomes a paste. Add in the apricot jam, amaretto, and cinnamon.
6.Roll out the dough and spread the filling over it. Carefully roll it up, being sure to tuck in the edges.
7.Preheat the oven to 350 degrees Fahrenheit.
8.Beat the egg whites and the 2 teaspoons of water together. Brush the rolled-up dough with the mixture. Sprinkle the roll with coarse sugar.
9.Bake in the oven for 1 hour. Let it cool before slicing. Enjoy!
