Ingredients

2 tablespoons achiote seeds
1/2 teaspoon salt
2 tablespoons cooking oil or 1 tablespoon butter
1/2 cup chopped onion
2 cups water
2 cups rice
1/2 cup diced bacon ( optional )

Instructions

1.In a small frying pan over medium-low heat, cook achiote seeds in cooking oil for 3-4 minutes until fragrant and oil turns red. Strain the oil and discard seeds.
2.In a large pot, mix rice, water, salt, and achiote oil. Stir and bring to a boil over high heat.
3.Reduce heat to low and cover. Simmer for 20 minutes.
4.In a frying pan, cook bacon and onions until bacon is crispy and onions are translucent. Set aside.
5.Once the rice is cooked, remove from heat and let it rest covered for 5 minutes before fluffing with a fork. Add bacon and onion mixture and stir well.
6.Serve hot and enjoy!
