Ingredients

20 large corn tortillas

2 white onions , diced
2 teaspoons cumin
2 tablespoons vegetable oil
2 teaspoons margarine
2 cans Ro-Tel tomatoes
2 cans diced green chilies or ( 4 ounce ) cans diced jalapeno peppers
10 slices pre cooked bacon , diced
2 cans cream of chicken soup
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
2 cups milk
2 cups cheddar cheese or 2 cups monterey jack pepper cheese

Instructions

1.Preheat the oven to 375 degrees F (190 degrees C). Grease a large casserole dish.
2.In a large skillet, heat the vegetable oil over medium heat. Add the onions and sauté until softened.
3.Add the diced chicken, cumin, and margarine to the skillet. Sauté until the chicken is heated through.
4.Add the Ro-Tel tomatoes, diced green chilies or jalapeno peppers, pre-cooked bacon, cream of chicken soup, chili powder, cayenne pepper, and milk to the skillet. Heat until everything is combined and heated through.
5.Spread out the tortillas on a flat surface. Spoon the chicken mixture onto each tortilla, then roll each tortilla tightly and place seam-side down in the casserole dish.
