Ingredients

3 cups milk
3 cups all-purpose flour
1 tablespoon kosher salt
6 eggs
6 ounces gruyere cheese , grated
Gruyere Popovers are an American interpretation of the French recipe 'gougères', which are essentially cheese puffs made with choux pastry. Popovers differ from gougères in that they are made with a simple batter that requires less fuss. Gruyere Popovers are wonderfully pillowy with a crispy exterior, making them ideal for brunch alongside eggs, bacon, and a side salad. A perfect recipe for those who love cheese and carbs.

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.In a saucepan, heat milk over medium heat until small bubbles form around the edges.
3.In a mixing bowl, whisk together flour and salt.
4.Add eggs one at a time, whisking well after each addition.
5.Stir in the warm milk a little at a time, whisking continuously to avoid lumps.
6.Stir in the grated Gruyere cheese.
7.Grease a 12-cup muffin tin and fill each cup 2/3 full with the batter.
8.Bake for 35-40 minutes, or until the popovers are golden brown and puffed.
