Ingredients

75 g water crackers
75 g finely grated gruyere
1/2 teaspoon cayenne
2 tablespoons chopped fresh parsley
2 tablespoons olive oil
600 g skinless boneless haddock fillets
salt
frshly ground black pepper
Gruyere Cracker Crusted Haddock is a delicious take on a classic pub favorite that combines beautiful haddock with water crackers, gruyere cheese, and fresh parsley. This easy to make recipe takes less than 30 minutes. It is perfect to serve for any occasion that needs something extra special for dinner.

Instructions

1.Preheat the oven to 220 C / Gas 7.
2.In a mortar, crush the water crackers to fine crumbs. Mix in the grated gruyere, cayenne and fresh parsley. Place the crumb mixture onto a large plate and set aside.
3.Heat the olive oil in a non-stick pan over medium heat. Season the haddock fillets with salt and black pepper.
4.Dredge the haddock fillets in the crumb mixture, pressing the mixture gently into the fish.
5.Place the haddock fillets onto the pan and cook for about 3 minutes per side.
6.Transfer the fish to a baking dish and place in the oven. Bake for about 5 minutes.
7.Remove the fish from the oven and serve immediately.
