2 cups long-grain rice

1/2 lb fresh peas , shelled or 1/4 cup frozen peas
1 1/2 tablespoons peanut oil
1 lb ground pork
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1 tablespoon rice wine or 1 tablespoon dry sherry
3 tablespoons green onions , finely chopped

Instructions

1.Preheat oven to 375ºF (190ºC).
2.Rinse rice under cold water and drain well.
3.Bring water to a boil in a pot and add rice. Cover and simmer over low heat until the water has been absorbed and the rice is tender, about 18 minutes.
4.While the rice is cooking, cook peas in boiling salted water for 2 minutes, or until tender. Drain immediately and rinse with cold water to stop the cooking process.
5.Heat oil in a large nonstick skillet over medium heat. Add pork and cook until browned and no longer pink, about 5 minutes.
6.In a small bowl, whisk together light and dark soy sauce, oyster sauce, and rice wine/sherry.
7.Once pork has browned, add soy sauce mixture and cooked peas to the skillet. Stir well.
8.Transfer the cooked rice and pork mixture to a casserole dish. Press the mixture down with a spoon to create an even layer. Sprinkle with green onions and bake in the preheated oven for 15 minutes, or until lightly browned on top. Serve hot.
