Ingredients

1 lb ground chicken
1 jalapeno , diced
1/2 medium onion , diced
1 garlic clove , minced
1 tablespoon cumin
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 cup mexican cheese
1 teaspoon olive oil
3 egg yolks
2 1/4 cups flour
1/2 cup butter
1 1/2 teaspoons salt
1 large egg
1/3 cup ice water
1 tablespoon of distilled white wine vinegar
1 tablespoon salt
1 tablespoon chili powder
Empanadas are a popular street food in Latin America, and they have become a hit all over the world because of their delicious taste and versatility. Ground Chicken Empanadas are a combination of ground chicken, jalapenos, and other spices wrapped in a flaky, buttery crust. They are a great appetizer to serve at a party or an after-school snack. Instructions

1.In a large mixing bowl, mix together ground chicken, jalapeno, onion, garlic, cumin, paprika, chili powder, salt, cayenne pepper and mexican cheese until well combined. Set aside.
2.In another large bowl, sift together flour and salt. Cut butter into small, pea-sized pieces before adding it to the flour mixture. Use a pastry blender to combine the butter and flour.
3.In a separate small mixing bowl, whisk the egg yolk with the ice water and white wine vinegar. Gradually pour this mixture into the flour mixture while mixing until a dough forms.
4.Divide the dough into two equal parts, wrap them tightly with plastic wrap, and refrigerate for at least an hour before using.
5.Preheat oven to 375 degrees F.
6.Roll out the dough on a floured surface and cut circles using a cookie cutter or other round object.
7.Spoon the ground chicken mixture onto one side of the circle dough.
8.Lightly brush the edges of the circle with water before folding the other half of the dough over the filling.
9.Press the edges of the dough together tightly before placing the empanadas on a baking sheet lined with parchment paper.
10.In a small bowl, whisk together egg yolk with 1 tablespoon of water to make egg wash.
11.Use a basting brush to brush the egg wash over each empanada before sprinkling with chili powder.
12.Bake for 20-25 minutes or until golden brown. Serve hot and enjoy!

PROS

These empanadas are a great finger food for parties and gatherings.

They are easy to make and can be prepared ahead of time and reheated.

CONS

Empanadas are fried dough pockets and are not the healthiest of foods.
Overconsumption can lead to weight gain and other health issues.
