Ground Beef Cannelloni is a classic Italian dish that combines pasta with a meaty, spinach-filled filling and a rich tomato sauce. This recipe calls for a homemade tomato sauce that is flavored with basil, garlic, and onion. The manicotti is stuffed with a mixture of ground beef, spinach, and chicken liver (optional) that is seasoned with parmesan cheese, heavy cream, and spices like oregano. Instructions

1.Preheat oven to 350°F.
2.In a large saucepan, heat 2 tablespoons of olive oil and sauté the finely chopped onion until it softens, around 5 minutes.
3.Add the plum tomatoes, tomato paste, sugar, basil, salt, and pepper and cook for 15 minutes over medium heat.
4.Meanwhile, in a separate skillet, heat the remaining 2 tablespoons of oil and sauté the chopped onion and garlic until they become fragrant, about 5 minutes.
5.Add the thawed and squeezed dry spinach and cook for 5 more minutes.
6.In a large mixing bowl, mix together the spinach mixture, ground beef, chicken livers (if using), parmesan cheese, heavy cream, beaten eggs, oregano, salt, and pepper.
7.Stuff each manicotti with the beef mixture.
8.Place the remaining 2 tablespoons of butter in a saucepan and melt over medium heat.
9.Add the flour and whisk until smooth.
10.Slowly stir in the milk and heavy cream and continue to whisk until the sauce thickens.
11.Stir in the 1 teaspoon of salt and pepper to taste.
12.Spread 1/3 of the tomato sauce in the bottom of a 13 x 9-inch baking dish.
13.Arrange the stuffed manicotti in the dish and pour the remaining tomato sauce over the top.
14.Pour the sauce over the top of the cannelloni and cover with foil.
15.Bake for 40 minutes, then remove the foil and bake for an additional 10-15 minutes.
16.Remove the cannelloni from the oven and allow to cool for a few minutes before serving.
