Ingredients

20 large whole fresh mushrooms
2 tablespoons butter
1 tablespoon oil
1 small onion , finely chopped
1 tablespoon minced fresh garlic ( to taste ) ( optional )
1/2 lb lean ground beef
4 slices ham , chopped
1/4 cup grated parmesan cheese
1/3 cup dry sherry
1/3 cup fine breadcrumbs
seasoning salt or white salt
fresh ground black pepper ( in place of black pepper if you prefer spicy ) or cayenne ( in place of black pepper if you prefer spicy )
mozzarella cheese , shredded or parmesan cheese , if desired

Savory ground beef and ham are mixed with Parmesan cheese, sherry, and breadcrumbs creating a flavorful filling that is then stuffed into large whole fresh mushrooms. Instructions

1.Preheat oven to 375°F and line a baking sheet with parchment or aluminum foil.
2.Remove stems from mushrooms and set aside. Clean mushrooms with damp paper towel or brush. Place on baking sheet.
3.In a skillet, heat butter and oil over medium heat. Add onion and garlic (if using) and sauté until softened.
4.Add ground beef and cook until browned. Add ham and continue cooking for another minute.
5.Add Parmesan cheese, sherry, breadcrumbs, and seasoning salt and black pepper or cayenne pepper. Mix well.
6.Stuff mushroom caps with meat mixture and top with mozzarella cheese or more Parmesan cheese.
7.Bake in oven for 18-20 minutes or until mushrooms are tender and cheese is melted and bubbly.
