1 cup onion , finely chopped
1/4 cup fresh lime juice or 1/4 cup fresh lemon juice , strained
1/2 scotch bonnet pepper , finely chopped
1/2 teaspoon freshly ground coarse black pepper
1 cup strained orange juice
1/4 cup shallots , finely chopped or 1/4 cup finely chopped scallion , white part only
1/4 cup water
1/4 teaspoon crumbled dried thyme
1/2 teaspoon salt

Instructions

1.Preheat oven to 350°F.
2.In a large skillet, heat the oil over medium-high heat. Add the pork chunks and cook until browned on all sides, about 8 minutes.
3.Add the onions, lime juice, scotch bonnet pepper, black pepper, orange juice, shallots, water, thyme, and salt. Stir to combine.

5.Remove the skillet from the oven and transfer the pork chunks to a serving dish. Strain the cooking liquid and reserve it.
6.In a small saucepan, bring the reserved cooking liquid to a simmer. Cook until it is reduced to about 1/2 cup, stirring occasionally.
7.Drizzle the reduced sauce over the pork chunks, tossing to coat.
