Ingredients

3 1/2 ounces achiote paste ( find it at mexican grocery stores it is called bija or bijol in Spanish )
3 canned chipotle chiles in adobo , plus 4 tablespoons of the canning sauce
1/4 cup olive oil , and a little more for the fruit
1 1/2 lbs thin-sliced pork shoulder
1 medium white onion , finely chopped
1/2 of a medium pineapple , sliced
20 warm flour tortillas
3 cups of shredded oaxaca cheese or 3 cups monterey jack cheese
salsa verde or salsa , roja
Gringas are a traditional dish from Northern Mexico that has gained a lot of popularity due to its unique combination of flavors. Instructions

1.Blend the achiote paste, canned chipotle chiles with the canning sauce, and olive oil in a blender.
2.Spread the marinade all over the pork slices and let sit for 30 minutes or overnight.
3.Pre-heat your grill to medium-high.
4.Grill the marinated pork slices, flipping once, until well-cooked.
5.Transfer the pork slices to a board, slice thinly and set aside.
6.Grill the pineapple slices until slightly caramelized.
7.Pre-heat a griddle over medium-high heat.
8.Warm up the flour tortillas on the griddle.
9.Assemble the gringas by placing warm tortillas on a plate, top with slices of grilled pork and pineapple, then add cheese.
10.Top with another tortilla, and grill until the cheese is melted.
11.Cut into wedges and serve with your favorite salsa.
