Ingredients

1/2 lb zucchini , approximately
2 -3 carrots
2 tablespoons olive oil
1 garlic clove

1/4 teaspoon ground cumin or 1/4 teaspoon cumin seed
1/4 teaspoon caraway seed
juice of half lemon
plain yogurt
fresh cilantro ( FRESH ! ) or fresh parsley ( FRESH ! )
salt , to taste
cracked black pepper , to taste

Instructions

1.Cut zucchini into 1/4 inch thick diagonal slices, and carrots into matchstick-size pieces preferably by hand. Crush garlic.
2.In a small bowl, mix together olive oil, garlic, harissa, cumin, caraway seeds, and lemon juice. Set aside.
3.Heat grill to medium-high heat. Brush zucchini and carrots with oil and sprinkle with salt and pepper.
4.Grill vegetables until tender and browned, about 4-5 minutes on each side.
5.Transfer vegetables to a plate and sprinkle with chopped cilantro or parsley. Serve with plain yogurt if desired.
