Ingredients

2 lbs ripe tomatoes , halved , about 6 medium
1 large onion , peeled & quartered
olive oil
salt & pepper , to taste
1 medium carrot , peeled & chopped
1 garlic clove , peeled & mined
3 -4 cups chicken stock or 3 -4 cups vegetable stock , see NOTE above
2 sprigs fresh thyme
2 sprigs parsley
2 celery tops
bay leaves , tied together or 2 sprigs wrapped in 1 cheesecloth
1/4 cup fresh basil , chopped
basil leaves , whole , for granish
1 tablespoon fresh lemon juice
plain yogurt or sour cream
Grilled Tomato-Basil Soup is a perfect meal for a hot summer day. It's light, refreshing, and packed with flavor and nutrients. This soup is easy to make and requires only a few simple ingredients that are easy to find in any grocery store. Instructions

1.Preheat the grill to high heat.
2.Brush the tomatoes and onion with olive oil and season with salt and pepper.
3.Place the vegetables on the grill, cut side down, and grill for about 5-7 minutes or until charred.
4.Transfer the grilled vegetables to a large pot and add chopped carrot, minced garlic, thyme, parsley, celery tops, bay leaves, and stock. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes or until vegetables are tender.
5.Remove from heat, discard bay leaves, and let it cool.
6.Using a hand blender, puree the soup until smooth and add fresh basil and lemon juice.
7.Season with salt and pepper to taste.
8.Serve hot with plain yogurt or sour cream and garnish with whole basil leaves.
