Ingredients

2 large sweet white onions , cut into 1/2 inch slices
2 mangoes , peeled and cut into 1/2 slices
2 tablespoons olive oil
1/2 cup white vinegar
1/3 cup packed light brown sugar ( I used Splenda )
2 tablespoons minced fresh ginger
1 teaspoon lime zest
1/2 teaspoon table salt
1 jalapenio pepper , seeded and minced
1/3 cup chopped cilantro ( if you must )
2 tablespoons fresh lime juice

Instructions

1.Preheat grill to medium-high heat.
2.Brush both sides of onion slices and mango slices with olive oil before placing them on the grill.
3.Cook the onions for 4-5 minutes on each side until they are tender and slightly charred.
4.Cook the mango slices for 2-3 minutes on each side until they are tender and have grill marks.
5.Remove the onions and mango slices from the grill and allow to cool.
6.In a saucepan, combine white vinegar, brown sugar, minced ginger, lime zest, salt, and jalapeno pepper.
7.Bring the mixture to a boil, then reduce the heat and simmer for 5-7 minutes, stirring frequently.
8.Remove the saucepan from heat and allow the mixture to cool.
9.Once cooled, add cilantro and lime juice to the saucepan and stir.
10.Finally, chop the grilled onions and mangoes into small pieces and mix them together.
11.Add the cooled vinegar mixture to the onion and mango mix and stir until well combined.
