3 medium garlic cloves , minced , divided

1 lb uncooked boneless skinless chicken breast , cut into 1 1/2-inch pieces
cooking spray
2 large sweet red peppers , cut into 1 1/2-inch pieces
1 large cucumber , seeded and cut into 1/4-inch pieces ( do not peel )
1/4 cup red onion , finely chopped
1 tablespoon fresh parsley , chopped
2 teaspoons olive oil
1/2 teaspoon table salt
1/4 teaspoon fresh ground black pepper

Instructions

1.In a large bowl, combine 1 cup of yogurt, 2 minced garlic cloves, rosemary leaves, lemon zest, lemon juice and 1 tsp sea salt
2.Add chicken to the yogurt marinade, making sure each piece is coated well. Cover and refrigerate for 30 minutes
3.Preheat your grill to medium-high heat and spray with cooking spray. Thread chicken and red pepper pieces alternatively onto skewers
4.Cook skewers for 8-10 minutes, or until chicken is fully cooked
5.In a small bowl, mix together 1 cup yogurt, 1 minced garlic clove, seeded cucumber, red onion, parsley, olive oil, table salt and fresh ground black pepper
6.Serve chicken skewers hot with cucumber relish on the side
