Ingredients

1/3 cup mayonnaise
1/4 cup chopped sun-dried tomato packed in oil
1 tablespoon fresh thyme , chopped
1 tablespoon fresh oregano , chopped
1/4 cup dry red wine
2 tablespoons olive oil
1 teaspoon freshly grated lemon peel
4 large portabella mushrooms , cleaned and stems removed
4 pieces focaccia bread , split
1/2 cup crumbled goat cheese

Instructions

1.In a small bowl, mix the mayonnaise, sun-dried tomatoes, thyme, oregano and red wine until well combined. Set aside.
2.Preheat a grill over medium-high heat. Brush the portabella mushrooms with the olive oil and sprinkle with the freshly grated lemon peel.
3.Grill the mushrooms for 4 minutes on each side, or until they are slightly tender and marked by the grill.
4.Grill the focaccia bread for 1-2 minutes on each side or until it is slightly toasted.
5.To assemble the burgers, spread a generous amount of the mayonnaise mixture on the bottom half of each piece of focaccia bread. Top each with a grilled mushroom and crumbled goat cheese. Serve immediately.
