Ingredients

3 dried guajillo chilies , seeds discarded
2 dried pasilla chiles , seeds discarded
1 cup boiling water , or as needed to cover
2 pork tenderloins , membranes ( silver skin ) removed
3/4 cup pineapple juice
1 tablespoon white vinegar
4 cloves garlic
1 teaspoon ground dried chipotle pepper
1 teaspoon ground cinnamon
1 pinch cayenne pepper , or to taste ( optional )
1 pinch ground cumin , or to taste
1 pinch dried oregano , or to taste
1 tablespoon vegetable oil , or as needed
1/2 teaspoon salt , or to taste
16 slices Monterey Jack cheese , divided
1 teaspoon vegetable oil
2 cups shredded cabbage , divided
1/2 cup roasted tomato salsa , divided
1 large jalapeno pepper , thinly sliced - or to taste
Grilled Pork Tacos al Pastor are a popular type of street food in Mexico that have made their way into the hearts and kitchens of people worldwide. The al Pastor marinade is traditionally made with a blend of chilies, pineapple, and spices, which gives the pork a sweet and spicy flavour with a tangy finish. These tacos are a perfect way to mix up Taco Tuesday by adding some unique and Mexican flavours to your dinner table. Serve them with some margaritas or tequila shots and you'll have a party that everyone will talk about for weeks to come. The best part? You don't have to travel to Mexico to enjoy them!

Instructions

1.Soak the guajillo and pasilla chiles in boiling water for 30 minutes.
2.Preheat the grill for high heat.
3.Place the pork tenderloins on the grill and cook for 20 minutes, or until they reach an internal temperature of 145°F.
4.While the pork is cooking, in a blender, combine the soaked chiles with their soaking liquid, pineapple juice, white vinegar, garlic, chipotle pepper, cinnamon, cayenne pepper, cumin, oregano, 1 tablespoon of vegetable oil, and salt.
5.Puree the mixture until smooth.
6.When the pork is done, remove from heat and allow it to rest for 5 minutes. Then, thinly slice the pork against the grain.
7.Heat 1 teaspoon of vegetable oil in a frying pan over medium-high heat and add the sliced pork.
8.Pour in the sauce mixture and cook for 5-7 minutes, stirring occasionally. The sauce should become thick and glossy.
9.To assemble the tacos, heat the tortillas for a few seconds on each side on a hot skillet or pan. Place a slice of Monterey Jack cheese in the center of each tortilla, then add some of the grilled pork, shredded cabbage, roasted tomato salsa, and jalapeno slices.
10.Serve immediately and enjoy!
