Ingredients

1 tablespoon honey
1 1/2 cups water , lukewarm
4 cups unbleached all-purpose flour , more as needed
2 teaspoons active dry yeast
1 1/2 teaspoons kosher salt
2 tablespoons olive oil , more later for the bowl and for brushing
1 medium orange
3/4 cup olive oil , more for brushing
1 tablespoon fennel seed , coarsely ground
1/2 cup coarsely chopped green olives or 1/2 cup fig , chopped
2 teaspoons coarse sea salt
1/4 teaspoon fennel powder ( finely ground fennel seeds )

Instructions

1.In a bowl, mix honey and lukewarm water then cover and set aside for 5-10 minutes.
2.In another bowl, combine flour, yeast, and kosher salt.
3.Add olive oil and the honey mixture to the flour mixture and then stir until moistened.
4.Use your hands to knead until you get a smooth dough then place it in a greased bowl and brush some olive oil on top.
5.Cover the bowl with a cloth and leave to rise until doubled in size.
6.Preheat the grill.
7.Mix orange zest and olive oil in a bowl, then brush the top of the flatbreads with it.
8.Sprinkle some ground fennel seeds and chopped olives or figs over the flatbreads and then whole sea salt and fennel powder.
9.Put flatbreads on the grill and cook until golden and crispy on the bottom. Then flip and cook until done.
