Ingredients

4 Cornish hens
4 jalapeno peppers
8 garlic cloves , peeled
1/4 cup orange juice
2 tablespoons lime juice
1 tablespoon ground cumin
1 tablespoon dried oregano ( or thyme )
2 teaspoons salt
1/3 cup olive oil
1 tablespoon maple syrup ( or honey )

Instructions

1.Preheat grill to medium-high heat.
2.In a blender, combine jalapenos, garlic, orange juice, lime juice, cumin, oregano, salt, olive oil, and maple syrup. Blend until smooth.
3.Place hens in a resealable plastic bag and pour marinade over them. Seal bag and turn to coat. Marinate in the refrigerator for at least 2 hours or overnight.
4.Remove hens from marinade and discard leftover marinade.
5.Place hens on grill, cover, and cook for 30 to 40 minutes or until the internal temperature reaches 165°F, turning occasionally.
