Ingredients

1 large mango , firm but ripe
1 sweet red pepper
398 ml coconut milk
284 ml low sodium chicken broth , undiluted
sea salt , to taste
fresh ground pepper , to taste
15 ml olive oil
340 ml brown basmati rice
3 green onions , sliced

The rice is cooked in chicken broth and coconut milk, giving it a rich, creamy texture and a slightly sweet flavor. Instructions

1.Preheat grill to medium high heat.
2.Peel the mango, then cut into thin slices. Seed and cut the sweet red pepper into wide strips.
3.In a medium saucepan, bring the coconut milk, chicken broth, sea salt, and pepper to a simmer over medium high heat.
4.Stir in the olive oil and rice.
5.Cover with a tight fitting lid and reduce the heat to low.
6.Cook for 20 minutes or until the rice is tender.
7.During last 5 minutes of cooking rice, place slices of mango and red pepper strips on grill and cook for 1-2 minutes per side.
8.Add the grilled mango and red pepper strips to the cooked rice, stir to combine.
9.Sprinkle sliced green onions on top of the rice and serve hot.
