Ingredients

2 pink grapefruit
1/4 cup olive oil
1 shallot , finely chopped
1 garlic clove , finely chopped
1 teaspoon pickled ginger , finely chopped
1 roasted red pepper , finely chopped
2 tablespoons finely chopped fresh cilantro
2 tablespoons of fresh mint , finely chopped
1 1/2 limes , zest of , grated
3 tablespoons freshly squeezed lime juice
1 tablespoon honey
1 tablespoon sherry wine vinegar
1 pinch cayenne pepper
kosher salt
fresh ground black pepper
4 lobsters
2 tablespoons olive oil
1 tablespoon mint tea leaves , ground to a powder
sherry wine vinegar ( can substitute white wine vinegar if need be )

Instructions

1.Start by preheating your grill to a medium-high heat.
2.Begin preparing the grapefruit salsa by cutting off the top and bottom of the grapefruit, and then removing the skin and pith so only the fruit is left.
3.Cut the segments out of the grapefruit over a bowl, ensuring any excess juice is caught in the bowl too.
4.Add the cilantro, mint, red pepper, shallot, garlic, ginger, lime zest, lime juice, honey, sherry vinegar, olive oil, and cayenne pepper to the grapefruit bowl with the juice.
5.Season the mixture well with salt and pepper and mix together.
6.Prepare the lobsters for grilling by splitting them in half lengthways, then removing the stomach, intestinal tract and any roe if necessary.
7.Brush the cut side of the lobster generously with olive oil, and sprinkle with the mint tea powder.
8.Grill the lobster halves, shell-side down for 6-8 minutes until almost cooked through.
9.Flip them over onto their flesh side, and grill for another few minutes until completely cooked through.
10.Plate the lobster and spoon over some of the delicious grapefruit salsa.
