2 habanero peppers , seeded
1 small onion , chopped
2 bunches green onions , chopped

1/2 teaspoon ground cinnamon
1 cup wood chips , soaked ( optional )
2 1/2 pounds pork tenderloin , butterflied and pounded to 3/4 inch

Instructions

1.Add habanero peppers, small onion, green onions, ginger, garlic, apple cider, white vinegar, soy sauce, olive oil, brown sugar, mustard seed, kosher salt, black pepper, dried thyme, allspice, nutmeg, and cinnamon in a blender.
2.Blend the mixture until it forms a smooth paste.
3.Marinate the pork tenderloin with the mixture for at least 2 hours.
4.Preheat the grill to medium-high heat.
5.Grill the pork tenderloin for 10-12 minutes per side or until the internal temperature reaches 145°F.
6.Let the pork rest for at least 5 minutes before serving.
