Ingredients

3 lbs salmon steaks , 1 inch thick
2 cups salt
2 cups sugar
1 cup fresh dill , chopped
1 teaspoon fresh ground pepper
1/2 cup butter , softened
2 tablespoons dill , minced
2 tablespoons parsley , minced
2 egg yolks
1 tablespoon dry mustard
1/2 teaspoon sugar
3 teaspoons Dijon mustard
1/2 teaspoon salt
1 cup olive oil
2 tablespoons vinegar
2 tablespoons fresh dill , minced

Grilled Gravad Lax is a twist on this dish using grilled salmon with a buttery dill sauce. The fish is marinated in salt, sugar, and fresh dill, then grilled to perfection. This makes a beautiful and impressive main dish for a special dinner party or a summer barbecue. The dish is easy to make though it requires time to prepare and marinate, the end result is amazing and worth waiting for. The salmon is moist, smoky, and tender with a uniquely delicate flavor that's sure to please the palate.

Instructions

1.In a bowl, mix together salt, sugar, chopped dill and pepper.
2.Spread the mixture over the salmon steaks, cover with plastic wrap and refrigerate for at least 24 hours.
3.After 24 hours, remove the salmon from the refrigerator and rinse under cold water. Pat dry with paper towels.
4.Mix the butter, minced dill, parsley, egg yolks, dry mustard, sugar, Dijon mustard, salt, olive oil and vinegar in a bowl.
5.Grill the salmon steaks for about 5-7 minutes on each side or until firm.
6.Brush the butter mixture onto the salmon and let it melt for a minute before serving.

PROS

CONS
