Ingredients

4 large Italian plum tomatoes , sliced thin ( juice from sliced tomatoes reserved )
2 tablespoons olive oil , divided
3 garlic cloves , minced
1 lb store-bought pizza dough ( or homemade )
salt & fresh ground pepper
3 ounces about 3/4 cup grated mozzarella cheese
4 cups packed arugula or 4 cups Baby Spinach
This Grilled Fresh Tomato & Greek Salad Pizza is a perfect way to use fresh summer tomatoes and add some greens to your pizza. The grilled tomatoes add a smoky sweetness and acidity to the pizza, while the arugula or baby spinach provides a fresh crunch and a healthy dose of green vegetables. This pizza is perfect for a summer evening meal and can be easily paired with a glass of white wine or a summer cocktail.

Instructions

1.Preheat grill to high heat.
2.Toss tomato slices with 1 tablespoon of olive oil and minced garlic.
3.Grill for 2-3 minutes until tomatoes start to soften.
4.Roll out pizza dough onto a floured surface to desired thickness and shape.
5.Brush remaining olive oil over the top of the pizza dough.
6.Sprinkle with salt and pepper.
7.Top with grilled tomato slices and grated mozzarella cheese.
8.Grill pizza for 5-7 minutes.
9.While pizza is grilling, toss arugula or baby spinach with a little olive oil and balsamic vinegar.
10.Remove pizza from grill and top with dressed arugula or baby spinach.
