Ingredients

4 teaspoons olive oil
4 slices focaccia bread , about 1 inch thick , split in half horizontally
8 slices scamorza cheese or 8 slices provolone cheese ( about 8 oz )
12 -16 fresh spinach leaves , washed and patted dry
1/4 cup finely crumbled cooked bacon or 1/4 cup turkey bacon

Instructions

1.Brush about 1/2 teaspoon of olive oil on the cut side of each slice of bread.
2.Heat a large skillet or grill pan over medium-high heat for 2 minutes.
3.Place the bread slices, oiled-side down, in the skillet or pan. Cook for about 1-2 minutes, or until lightly golden.
4.Flip the bread slices over and top each of the 4 slices with 2 slices of cheese.
5.Cook for another 1-2 minutes, until the cheese is melted.
6.Top half of the slices with 3-4 spinach leaves and 1 tablespoon of crumbled bacon or turkey bacon.
7.Place the remaining slices, cheese-side down, on top of the spinach and bacon slices. Press gently.
8.Cook for another 1-2 minutes, or until the cheese is fully melted and the bread is crispy.
