Ingredients

2 -3 long oriental eggplants
olive oil , for brushing
1 cup water or 1 cup kombu dashi soup
2 tablespoons tamari soy sauce
1 teaspoon fresh ginger , grated
1 tablespoon raw sugar
1 teaspoon hot chili paste
1/2 cup daikon radish , grated
1 scallion , sliced
1 teaspoon sesame seeds , toasted
1 dash nanami togarashi ( option )

Instructions

1.Cut the eggplant into long diagonal slices and brush with olive oil.
2.In a bowl, mix together water (or dashi soup), tamari soy sauce, grated ginger, raw sugar, and chili paste to make the marinade.
3.Layer the eggplant slices in a shallow dish and pour the marinade over them.
4.Let the eggplant marinate for at least 30 minutes.
5.Heat up a grill pan or outdoor grill and cook the eggplant slices for about 3-4 minutes on each side.
6.Serve the grilled eggplant topped with grated daikon radish, sliced scallions, toasted sesame seeds, and nanami togarashi, if desired.
