Eggplant is a versatile vegetable that can be prepared in a variety of ways, but grilling is one of the best methods as it helps to enhance its natural smoky flavor. In this recipe, we've added a Middle-Eastern twist by drizzling the eggplant with a labneh and tahini sauce that is flavored with pomegranate molasses and date syrup. This adds a sweet and tangy flavor that perfectly complements the smoky flavor of the grilled eggplant.
