Ingredients

3/4 cup chopped cilantro
1/2 - 1 fresh jalapenos or 1/2-1 serrano chili
3/4 3/4 cup creme fraiche ( crema preferred ) or 3/4 cup sour cream ( crema preferred )
1/8 teaspoon salt
8 ounces chihuahua cheese , grated ( or Muenster )
6 ounces fresh goat cheese ( or a combination ) or 6 ounces cream cheese , softened ( or a combination )
1/2 cup corn kernel ( fresh or thawed frozen )
1/4 cup pine nuts , toasted in dry skillet
2 tablespoons minced onions
1/2 teaspoon minced fresh epazote ( optional )
8 poblano chiles
vegetable oil cooking spray
chopped tomato ( optional )

Instructions

1.Preheat the grill to high heat.
2.Cut off the tops of the poblano chiles and remove the seeds and veins.
3.In a medium bowl, mix together the cilantro, jalapenos or serrano chili, 3/4 cup creme fraiche or sour cream, and salt. Set aside.
4.In a separate bowl, mix together the grated chihuahua cheese, fresh goat cheese or cream cheese, corn kernels, pine nuts, minced onions, and minced epazote (if using).
5.Stuff each poblano chile with the cheese mixture and secure with toothpicks.
6.Lightly spray the chiles with vegetable oil cooking spray.
7.Grill the chiles for 2-3 minutes per side, or until they are charred and the cheese is melted.
8.Remove the toothpicks and serve the chiles hot, with the cilantro sauce and chopped tomato if desired.
